Chickpea & Avocado Salad

A delicious salad that can be eaten on its own or served with some chicken or salmon for a more substantial meal. It’s packed full of vitamins and minerals and healthy fats and a serving will contribute approx. 2 portions towards your daily veg intake

Chickpea and Avocado Salad

  1. 1 cos lettuce shredded (or 100g ready to use salad leaves will work)
  2. 400g tinned chickpeas, drained and rinsed
  3. 25g sunflower, pumpkin seeds or pine nuts
  4. 1 tbsp olive oil
  5. 1 medium avocado
  6. 2 tbsp apple cider vinegar
  7. 3 tbsp olive oil
  8. ½ tsp mustard
  9. ½ clove garlic, crushed
  10. Sea salt and black pepper to taste
