- Cut cauliflower into chunks and blitz in a food processor until it resembles breadcrumbs. Put into a mixing bowl.
- Add the remaining ingredients and mix well.
- Heat a tsp coconut oil in a frying pan and add a large heaped tbsp. of mixture per fritter. Flatten the fritter (to approx. 1-2cm depth) with the back of your spoon.
